One of the best parts of being gluten-free is meeting special people along the journey. Two years ago, I met Ellen Fitzsimmons in Texas at a Gluten Intolerance Group conference. That was the year I was planning the first Gluten Free Cooking Expo and had traveled to Texas to meet prospective vendors for the event. I was so nervous. No one had ever heard of me or my event and I didn’t know what to expect. Aaron Flores, who was at that time the Executive Chef for the Doubletree Hotel Oakbrook, had taken me with him to Texas to “introduce me” to his friends that owned gluten-free companies. Without him, I don’t think the first Expo would have ever happened.
Ellen and I ate lunch together and then she traveled from Wisconsin to my first Expo. She has attended both years and I hope she will join us again this year. Ellen is one of those people that has much knowledge to share. She is the kind of person that actually fills out the exit survey with valuable information and follows it up with emails about how to make the event better the next year. She is also a great cook!
