Gluten Free Grilling



radishIt is finally warm enough in Chicago to grill on a regular basis.  Tonight we made hamburgers, a medley of grilled vegetables and a radish salad.  Believe it or not, my 4 and 6 year old kids love the radish salad!

Now that fresh herbs are available for a few months, I throw them in everything.   Not only do they look and smell divine, they taste great too.  If you don’t have a garden, I hope you will plant a few herb plants in a pot in your windowsill.  They make spring and summer cooking taste even better.

Fresh Grilled Vegetable and Herb Medley
One yellow or red pepper, chopped
1/2 onion, chopped
One zuchini or yellow squash, chopped
1/4 cup fresh herbs, chopped (I used basil, rosemary, oregano, marjoram)
1 tsp kosher salt
2 tsp olive oil

Toss cut up vegetables in oil and salt.  Place vegetables in a grill pan over medium grill heat.  Stir occasionally and grill until tender (approximately 10 minutes).  Toss in herbs and serve warm.

Radish Salad
1 cup sliced radishes
A splash of your favorite salad dressing (we use a strawberry vinagrette)

Toss the radishes with your favorite dressing.  Radishes are a beautiful color and good source of Vitamin C, folate, magnesium and potassium.
