Celebrate Oktoberfest with this easy to make soup that will delight your gfree crowd on a cold fall day. Try it with different gfree beers. You can also make it with apple cider instead of the beer.
1 teaspoon olive oil
1/4 pound gfree bratwurst, cooked, halved and sliced
2 cups gfree beef broth
2 leeks, white part only, sliced
1 large potato, peeled and cut into 1/2 inch cubes
1/4 teaspoon pepper
1 red pepper, chopped
3/4 cup gfree beer
Warm the oil in a large pot over medium heat for one minute. Add the bratwurst and saute until lightly browned. Transfer bratwurst to a bowl and cover with foil to keep warm.
Combine broth, leeks (see below), potatoes and ground pepper in the pot. Cover and bring to a boil. Reduce the heat and simmer until potatoes are tender, approximatley 15 minutes. Transfer half the mixture to a bowl and cover with foil.
Using a potato masher or hand immersion blender, mash the remaining vegetables. Stir in the bratwurst and remaining vegetables. Stir in the red pepper and beer. Simmer for 5-10 minutes more. Top each serving with chopped chives and/or sour-cream.
Make sure to swish the leeks in cold water to remove any sand.
