Smashed potatoes are true comfort food. This recipe is sure to please anyone who loves good mashed potatoes.
2 pounds red-skinned potatoes
2 garlic cloves
1 sprig fresh thyme
1/2 cup chicken broth
2 T olive oil
2 Tablespoons plus 2 teaspoons kosher salt, divided
ground nutmeg
ground pepper
Scrub the potatoes to make sure the skin is clean. Put the potatoes, garlic and thyme in a large saucepan and cover them with cold water. Add 2 Tablespoons of kosher salt to the water. Bring the water to a boil and then reduce to a simmer. Simmer for approximately 20 minutes or until the potatoes are fork tender.
Drain the potatoes and discard the thyme. Place the potatoes in a large serving bowl and “smash” them with a fork or potato masher. While you are smashing the potatoes, add the chicken broth , olive oil, nutmeg, pepper, and 2 teaspoons kosher salt.
Serve warm.
Variations:
Add 4 scallions, chopped finely
Add 1/2 cup pesto
Add 1/2 cup crumbled bacon
Add 2/3 cup freshly grated parmesan
