Chocolate Coconut Milk Icecream

I know it seems crazy to be making ice cream when it is snowing outside.  But every once in a while our family wants some ice cream even when the numbers on the thermometer are down fairly low.  We have been buying So Delicious Coconut Milk Icecream and we love it!  Here is a nice recipe if you don’t want to purchase pre-made ice cream.  I also like that you can add other ingredients and vary the flavors when you make your own desserts.Chocolate Coconut Milk Ice Cream
Makes 1 quart.Recipe from David Lebovitz, via Mac & Cheese.
1 cup water
1 cup sugar
5 ounces bittersweet chocolate, coarsely chopped
2 cups canned coconut milk
1 tablespoon dark rum
Heat water and sugar in a medium saucepan until sugar is dissolved. Add chocolate to the syrup and stir until chocolate is completely melted. Remove from heat, and stir in coconut milk and rum.

Chill completely (at least 2-3 hours), then freeze in ice cream machine according to manufacturer’s instructions. Transfer to a freezer safe container and freeze overnight.
