Here is a great gluten-free crock pot soup that is perfect for winter. My husband is not a fan of split pea soup, but he likes this version.
1 pound dried split peas, sorted and rinsed
7 cups water
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1 ham bone or 2 pounds ham shanks
Use a four to six quart slow cooker (crock pot) to make this soup.
Add all ingredients to slow cooker. Place cover on slow cooker and set to low heat for four hours.
Remove the ham bone/shanks allow to cool. Cut off any excess fat from the ham and dice the ham meat. Add back to the soup and stir. Serve hot (especially good with gluten-free croutons)
