My husband really loves beans. He keeps begging me to make more bean dishes. I also am running a support group that is asking for crock pot recipes. Here is a black bean soup that you can make in your crock pot. (The crock pot pictured is filled with stew not this soup. I did not take a picture of the soup but thought some of you might wonder what a crock pot looks like.)
Ingredients
2 T vegetable oil
1 large onion, chopped
3 cloves garlic, minced
1 green pepper, diced
1 10 oz. can diced tomatoes
1 pound dried black beans, sorted and rinsed
1 cup cooked ham, diced
5 cups low-sodium beef broth
2 teaspoons dried oregano
Add all ingredients to a crock pot. The crock pot should be between 3.5 and 6 quarts. Place cover on crock pot. Cook on high setting for 6-8 hours. Add salt and pepper to taste when serving.
