Walnut Hummus Dip

I know that it sounds strange to be putting walnuts in your hummus dip.  But last night, we had our cooking group gathering and the theme was Middle Eastern cuisine.   I remember recently reading an article about using nuts as a replacement for beans and I thought I would try using walnuts in my hummus.  I have A LOT of walnuts leftover from the holidays and it turns out that they work beautifully in dip!  Your guests will be wanting the recipe for this easy to make and delicious appetizer.  It would also be perfect to take to work for lunch with some vegetables.


1 cup chopped walnuts
1 cup gluten-free bread crumbs
1 cup olive oil
1/2 cup water
juice of half a lemon
1 teaspoon grated lemon zest
1/2 cup parsley (save a little for the garnish)
3 cloves garlic
1 teaspoon salt

Place all ingredients in your blender except for the olive oil.  Pulse until blended.  Slowly drizzle the olive oil into the mixture while the blender is on low speed.  If the dip is too thick, add more olive oil until it reaches the perfect consistency.  Top with chopped parsley for garnish.
