Oatmeal is one of those gluten-free staples that was taboo until recently. Now that there are gluten-free oats available, oatmeal can again be enjoyed for breakfast! I know there are some of you that will think you can’t make this recipe because your body doesn’t process oats. Well, no worries, make the recipe with cream of rice cereal. Gluten Free Sensations makes a wonderful cream of rice.
Great gluten-free oats can be purchased from Gluten Free Oats, Bob’s Red Mill, Gifts of Nature or Cream Hill Estates. You can find all of these companies online and some at your local stores.
1 cup dairy-free milk, such as So Delicious Coconut Milk, rice milk, hemp milk, soy milk, etc…
3/4 cups gluten-free oats
1/2 cup apple sauce
1 Tablespoon brown sugar, maple syrup or amber agave nectar
1/8 teaspoon gluten-free vanilla exract
1/4 cup raisins or dried cranberries (optional)
1/4 cup chopped walnuts or pecans (optional)
1 Tablespoon flax meal (optional – adds nice fiber!)
sprinkle of cinnamon to top the oatmeal
Bring the milk to a boil in a medium saucepan. Add the oats and cook 8-12 minutes or until thick. Make sure to stir them occasionally. Add the remaining ingredients (except the cinnamon) and stir. Cook for one more minute while stirring. Spoon into two to three bowls and sprinkle with cinnamon.
