This is perfect frosting for any cake or cupcake. It is easy to make and tasty too! If you don’t want to make frosting, consider buying a can of Betty Crocker frosting. They are now labeled gluten free to make your life easier.
1 cup sugar
1/3 cup water
1/4 teaspoon cream of tartar
2 egg whites
1 teaspoon gluten free vanilla, lemon or almond extract
Using a stand mixer, whip the egg whites and extract to soft peaks on medium speed. This will take about two to three minutes. While the egg whites are whipping, place the sugar, water and cream of tartar in a sauce pan over medium heat. Stir constantly until sugar dissolves. Once the sugar is dissolved and the egg whites are soft peaks, slowly add the sugar mixture into the egg whites with the mixer on. Keep whipping the eggs until stiff peaks form, about three to five more minutes. Frost cake when cooled completely.
