This dish is true Greek vegetarian comfort food. Roasted vegetables that couldn’t be easier to make. The best part is the hint of cinnamon and dill. It seems like a lot of work to put this together but it is so easy and you won’t be disappointed.
Roasted Vegetable Briami
1 red or yellow pepper, cut into 1/2″ slices
1 large red or yellow onion, cut into 1/2″ slices
3 cloves garlic, minced
1 large zucchini, halved and then cut into ½” slices
4 red potatoes, halved and then cut into ½” slices
two handfuls of cherry tomatoes
¼ cup olive oil
2 teaspoons dried oregano
2 teaspoons dried parsley
1 1/2 teaspoons dried dill
1/ 2 teaspoon ground cinnamon
salt and pepper to taste
Preheat oven to 350
Heat 1-2 Tablespoons oil in a pan over medium heat. Add the onion and sauté while stirring for 3-4 minutes. Add the garlic and cook for 1 more minute.
In a large bowl, add all the other ingredients. Season with salt and pepper and stir using a large spoon or your hands. Add the onion and garlic and stir into the other vegetables.
Place the vegetables in a large casserole dish and pour remaining olive oil over veggies. Cover and bake for 1 hour. Stir after 30 minutes.
