This salad is the perfect dish to serve during the holidays or take to a gathering. If you take a protein-based side dish with you to your events, you will never be hungry and will know you have safe food to share.
Holiday Quinoa Salad
3 cups cooked quinoa*
1 cup cubed butternut squash pieces**
1 large shallot, peeled and minced
1/2 teaspoon salt
1/2 cup dried cherries
1/2 cup chopped pecans
1/4 cup sliced green onions
½ cup fresh parsley, minced
juice and zest from one orange
2 Tbsp olive oil
Salt and freshly ground pepper
Prepare quinoa according to package. Allow to cool.
Add the squash and 1 tablespoon water to a microwave safe dish. Cover and microwave squash pieces for 3 minutes on high power.
Add 1 teaspoon oil to a sauté pan and heat over medium heat. Add the squash and onions and sauté for 3-5 minutes.
Put quinoa in a large serving bowl. Add the squash and onion to the quinoa. Add remaining ingredients. Stir well. Serve warm, chilled or at room temperature.
* For delicious quinoa, cook the quinoa in chicken or vegetable broth instead of water.
** You can purchase pre-cut squash in the produce section of many grocery stores or in the freezer section.
