A few weeks ago I was in Columbus, Ohio and had a great Greek Chopped Salad at a restaurant in a food court. I would have never guessed this salad would have been so good or inspire me to create the same salad at home. The restaurant used banana ring peppers and they added the perfect zing to the salad. I would have never added those on my own. Here is my version of the wonderful Greek Chopped Salad I had in Ohio.
4 cups lettuce of your choice (I like Butter Lettuce)
1 – 2 cups grilled chicken, cut into bite-sized pieces
1 cup tomatoes, cut into bite-sized pieces
1/4 cup red onion, sliced very thin
1 cup cucumber, cubed or sliced
1/2 cup mild banana ring peppers (jarred), diced
1/4 – 1/3 cup good quality feta cheese, crumbled
1/2 cup pitted kalamata olives, whole or sliced
Salad Dressing – either oil and vinegar with a sprinkle of oregano or ranch dressing
Prepare all ingredients and mix together. Vary amounts of ingredients according to your taste. You can add more tomatoes or chicken or leave the chicken out all together. There is no magic amount of ingredients to a chopped salad, so be creative and enjoy! The olives and feta are rather salty so you probably won’t need to add any salt to the dressing. You can also make this without the feta if you need a dairy free version.
