How to make a quick festive gluten free cake



Last night we celebrated Hannukah at my parent’s house.  We had delicious chicken soup and perfect potato pancakes.  Then my mother brought out the cake for dessert.  It was perfect – quick and easy to make and adorable.

She took a cake mix and baked it in a loaf pan.  Then she made a ganache frosting and covered it with festive sprinkles.  This would have been cute as cupcakes too!

You don’t always have to make everything from scratch.  Actually, many of the cake and cookie mixes are as good, if not better, than what you would make yourself from scratch.  So don’t fret if you aren’t a great baker.  Pull out a mix and get to work.  Whip it up, bake it, let it cool completely and have fun decorating.  Your guests will be thrilled you gave them dessert and you won’t have to stress over a recipe and hard to find ingredients.
