Sausage and Kale Quick Mix Supper



Are you one of those folks that are afraid of kale?  Don’t be!  Buy a bunch at the store and try this recipe.  You won’t regret it…

Have you ever had one of those days when dinner time rolled around, you were running out the door and you had no clue what to prepare for dinner when you returned home?  Plus, you felt like you had nothing in your house that would pull together into a meal?   I had one of those days this week.

It was 4:30, we were leaving for karate at 4:45 and wouldn’t be home until 7:15 and everyone was going to be starving.  Here is what I threw together – and I mean threw together!  I thought it would be terrible but we all absolutely loved it, it filled us up, it smelled great and I was able to make dinner in less than 10 minutes and heat it up when I got home.  Perfection…..

1 pound bulk Italian Sausage
1/2 cup diced onion
1  15 oz. can kidney beans, drained
1  14.5 oz. can diced tomatoes (use the juice too)
1 4 oz. can mild green chili peppers, drained and diced
1 cup diced fresh kale
1 8 oz. package No Cook Noodles, optional, rinsed and cut up into 1″ pieces

Place the sausage and onion in a saute pan.  Over medium heat, saute the meat and onions until the meat is cooked through and no longer pink, 4-6 minutes.  I use a wooden spoon to break up the clumps of meat while sauteing.

Add the other ingredients and stir until heated through, 3-4 more minutes.  If you have time, cover the pan and allow to simmer for 30 minutes so the flavors come together more.

You can also add some No Cook Noodles for a quick filler.  I have been using the NoOodle brand.  I take the noodles and rinse them well while my meat is cooking.  Then I take a scissors and cut up the noodles so they are in smaller pieces (they tend to be in really long strands that my kids can’t eat).  I pop them into the meat mixture and it bulks it up a little more.  Other options:  Add cooked quinoa, rice or regular noodles.

  1. I know I need to try using kale more often, and this combination of sausage, beans and tomatoes sounds really good!
