Do you ever dream about the perfect flavor combinations? I think the Dreamsicle people hit it right on the head when they combined orange and creamy vanilla. I had some random ingredients in my pantry this week and thought I’d make some cookies that had those decadent flavors. And – I was procrastinating from folding the laundry so making cookies sounded much better:)
The batter for these cookie will be almost like a sticky paste and they will puff up when baking. But once they are cooled they are decadent! Beware – it is hard to eat just one!
Citrus Dream Cookies
1/2 cup canola, grapeseed or corn oil
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon orange extract
1 cup GF Flour Blend (use a brand that has xanthan gum added already)*
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cups sugar
1/2 cup shredded coconut
1/2 cup white chocolate chips
1/4 cup macadamia nuts, chopped finely
10 dried apricots, chopped finely
Preheat oven to 375. Place silpat mats or parchment paper on two cookie sheets.
In a large bowl, add the oil, egg, vanilla and orange extracts. Combine.
To the bowl, add the flour, baking powder, baking soda, salt, and sugar and combine. The batter will be almost like a putty.
Add the coconut, chocolate, macadamia nuts and apricots and incorporate into the dough. I use a fork and mash them all in.
Use a tablespoon or a 1.5″ scoop and take a scoop of dough and roll it into a ball. Place it on the cookie sheet and repeat with the remaining dough, placing each ball about 2″ apart.
Bake for 10 minutes. Remove from oven and cool on a cooling rack. Makes approximately 20-22 cookies.
