Maple Pecan Sweet Potato Casserole

This is a super-easy dish that will be a big hit at your next Fall gathering.  It is perfect for Thanksgiving or to serve on a chilly night with turkey or pork. You can also serve the pecans for a snack by themselves.

Make a double batch of the pecan topping.  Place the batch on a cookie sheet and bake at 350 for 10-15 minutes or until the glaze hardens.  Watch so the glaze doesn’t burn.  Both kids and adults will love these!

Serves 6-8

For the Potatoes:

3 medium sweet potatoes, peeled and cubed
2 Tablespoons, maple syrup
¼ cup packed light brown sugar
1 teaspoon GF vanilla extract
2 large eggs
spray oil

For the Topping:
1 cup raw pecan halves
¼ cup packed light brown sugar
1 Tablespoon maple syrup


Preheat oven to 350.

Place the sweet potatoes in a steamer basket and steam for 8-10 minutes, until fork tender.  Remove from heat.

In a mixing bowl, combine the maple syrup, brown, sugar, vanilla extract and eggs using a hand blender.  Once combined, add the sweet potatoes and continue to blend until creamy.

Transfer the sweet potato mixture to a 1.5 quart casserole that has been sprayed with oil.

In a small bowl combine the brown sugar and maple syrup with a fork.  Add in the pecans and stir until the pecans are coated with the sugar mixture.

Pour the pecans over the sweet potatoes.  Bake at 350 for 30 minutes.  Serve warm.

        We made the Maple Pecan Sweet Potato Casserole for thanksgiving yesterday and all of it was gone. Most took seconds.
        Thanks for the tip about steaming the sweet potatos. We cooked them the night before and did not cube them only were able to quarter them. We did not have enough Maple Syrup so added a table spoon of Light Agave Syrup.
        Thanks for this wonderful recipe.
