My sister is in town from Denver and is on a very restricted diet. Her 7-month old is having a lot of food reactions and she needs to be extra careful about what she is eating. While visiting me last week, she mentioned she was craving muffins. I try and keep a box or two of King Arthur Flour Gluten Free Muffin Mix on hand in my pantry at all times. This mix has allowed me to go to various functions and have terrific muffins to bring along.
I have even made muffins spiked with alcohol and cranberries. They were delicious too!
To make the Easy Lemon Muffins, I used Ener-G Egg-Replacer for the eggs (my sister can’t eat eggs right now) and for the oil I used lemon olive oil. It gave the muffins just enough lemony zip and they were delicious!
For more of a lemon taste, you could add the zest of a lemon or a 1/2 teaspoon of gluten-free lemon extract.
Variation: Add 1 cup of fresh blueberries and a teaspoon of cinnamon.
