Vegetable Garden Turkey Chili



If you have a lot of vegetables from your garden and want a quick meal to prepare for dinner – here it is!

1 pound ground turkey
2 cups coarsely diced tomatoes
2 green peppers, seeded and diced
1 large onion, peeled and diced
1 medium zucchini, diced
1 14 oz. can black beans*
2 teaspoons olive oil
1 packet chili or taco seasoning
cheese, optional for garnish
shredded lettuce or cabbage, optional for garnish

In a heavy duty skillet or dutch oven, heat the oil over medium heat.  Add the turkey and cook for 10 minutes, or until slightly browned.  Every few minutes, break up the turkey chunks with a wooden spoon.

Add the beans (with liquid from the can), tomatoes, peppers, onion, zucchini and seasoning packet.  Stir and cook over medium heat with the pot covered for 45 minutes.

Serve over shredded lettuce or cabbage and garnish with shredded cheese.

*You can use the liquid from the beans since it will act as a starch and slightly thicken the liquid in the pan.  No need to rinse the beans if you don’t want to!

    This looks really good Jen. For some reason, I’m not too fond of turkey, so I’ll try this with chicken.
