Easy Veggie Soup with White Beans and Bacon



Veggie SoupI haven’t posted a recipe in a very long time and this one will knock your socks off!  Our entire family devoured their bowls of soup for dinner last night and begged me to please post the recipe for all of you at home.  It couldn’t be easier to make!

1 12 oz. bag frozen spinach1 12 oz. bag frozen broccoli
1 12 oz. bag peppers and onions
1 12 oz. bag succotash
1 28 oz. can diced tomatoes
1 14 oz. can white cannelini beans, drained
2 strips bacon, diced
1 1/2 teaspoons dried thyme
Salt and Pepper to taste

Place frozen vegetables in a dutch oven or heavy duty stock pot.  Pour in canned tomatoes and cover the vegetables with water.  Bring to a boil.

Once boiling, turn heat down to a simmer.  Add thyme and a few teaspoons of salt.  Stir and cover the pot.  Allow to simmer for up to 4 hours on low heat.

Add salt and pepper to taste.

Before serving:  Add the bacon to a small frying pan.  Stir occasionally, for 3-5 minutes.  Once the bacon is softened and browning, add the drained beans to the pan.  Allow to cook for 5 minutes over low heat so the beans get flavored by the bacon.

Ladle soup into bowls.  Add a big spoonful of bacony beans to each bowl.  Enjoy!!
