Strawberry Rhubarb Pie

pieNothing says summer like Strawberry Rhubarb Pie! Whether you make a crust or buy a crust, it doesn’t matter. The shear joy in this pie is the fresh flavors that take you back to your youth.

One of our favorite crusts for this recipe is Breads From Anna Pie Crust. It isn’t a traditional pie crust, but works perfectly with this particular pie and the package makes 2 crusts – perfect for 2 pies! Breads From Anna’s products are grain-free and diabetic friendly.

For the perfect Gluten Free Strawberry Rhubarb Pie, choose your crust. Either buy one pre-made, make one from scratch. Either will work just fine. The picture shown at the top of this article is a traditional pie crust, not the Breads From Anna Mix.

1 9″ pie shell
2 cups rhubarb, sliced
2 pints strawberries, halved
1 1/4 cups sugar
1/4 cup instant tapioca

Preheat oven to 425 F.

Combine strawberries, rhubarb, sugar and tapioca in a large bowl. Stir and allow to rest for 30 minutes.

While the fruit is resting, prepare the crust, as directed on the package (or make your own version from scratch).

Place the pie tin on a baking sheet.

Spoon the fruit mixture into the crust, leaving any excess liquid in the bowl.

Bake for 45 minutes. Remove from the oven and allow to cool before serving.
