Pesto Pizza



pesto-ingredientsPizza has changed dramatically at our house since I can’t eat tomatoes anymore.  I think we all agree – it is even better!  Today my shipment of Gluten Free Creations multi-grain pizza crust arrived.  I LOVE this crust!  However, you can create this pizza on any GF crust.  Here is what we created…

Pesto Pizza

We used 3 8″ crusts.

3/4 pounds Italian Sausage
1 red pepper, diced
1/2 red onion, sliced thin
3/4 cup prepared pesto
1 1/2 cups mozzarella cheese, shredded (we use goat mozzarella)
3 teaspoons dried oregano
3 teaspoons dried basil
kosher salt

Prepare oven as directed on crust package.

In a large saute pan, saute Italian sausage.  If using very lean meat, add a small amount of olive oil to coat pan.  Once sausage is cooked, add onions and peppers and cook until soft (approximately 10 minutes).

Place pizza crusts on cookie sheet.  Top each crust with 1/4 cup pesto and spread evenly.  Divide the toppings in thirds and place on top of pesto.

Sprinkle 1/2 cup of cheese on each pizza.  Sprinkle 1 teaspoon of dried oregano and basil on each pizza.  Add salt if desired.

Bake as described on crust package.  Serve with a great GF beer or a glass of red wine.
